I have always been impartial to pancakes. The big, fluffy buttermilk pancakes served at cafe's, lathered with sticky maple syrup just never appealed to me. I have always been a savoury breakfast girl, and still can never look past good old fashioned poached eggs.
However, about a year ago I was inspired to create my own pancakes. I figured that having the freedom to experiment I could create a flavour combination with toppings that would tickle my fancy and make me fall in love with pancakes. Indeed, my buckwheat pancakes did just that. The buckwheat flour offers a nuttiness, which in my opinion adds an interesting flavour. If you don't have access to buckwheat flour, you can quite simply make your own by grinding buckwheat groats in a food processor!

Basic Buckwheat Pancakes
1/3 cup buckwheat flour
1/3 cup almond milk (or milk of choice)
1 egg (or replace with 1/2 mashed banana)
1/2 tsp baking powder
2 tbsp Natvia stevia (sub for rice malt syrup, maple syrup or honey)
1. Combine all ingredients in a bowl and mix well. Optional: add flavour variations (see below).
2. Allow mixture to sit for a few minutes. Whilst this is happening, heat a lightly greased (I use coconut oil spray) pan on the stove.
3. Spoon 2 tbsp of pancake batter in the pan and allow to cook for approx 1-2 mins per side.
4. Stack pancakes, serve with toppings of choice and devour!
Pancake Flavour Ideas
- Chocolate Pancakes - add 1-2 tbsp cacao powder.
- Vanilla Choc-Chip Pancakes - add 1 tsp vanilla extract and 2 tbsp cacao nibs.
- Blueberry Pancakes - add 1/4 cup frozen/fresh blueberries.
- Coconut Pancakes - add 2 tbsp shredded coconut.
- Matcha Pancakes - add 1 tbsp matcha powder.
Topping Ideas
Fresh fruit, frozen fruit, rice malt syrup, tahini, nut butter, maple syrup, cacao nibs, mulberries, seeds, nuts, shredded coconut, yogurt, coconut yogurt, goji berries etc.
